Paletas
These traditional Mexican popsicles, called Paletas, are a refreshing summer treat. Paletas can be milk-based, which are slightly creamy, or water-based, which are icy.
PREP TIME: 10 to 20 minutes, plus at least 3 hours to freeze.
Banana-Coconut
You will need:
- 1 cup coconut milk
- 3/4 mashed banana
- 1/2 cup coconut flakes
- 1 teaspoon vanilla
- 1/4 cup sugar
Dissolve sugar in water
Blend all together in blender
Pour mixture into molds
Put into freezer for 3 hours |
Honeydew-Lime
You will need:
- 1 ripe honeydew melon
- 2/3 cup fresh lime juice
- 1/4 cup sugar
- 1/4 cup water
Dissolve sugar in water
Blend all together in blender
Pour mixture into molds
Put into freezer for 3 hours |

Limeade
Make this easy and refreshing Mexican style drink perfect for a hot summer day.
Ingredients:
1 Cup Water
1 Cup fresh-squeezed Lime Juice
2 Cups white sugar
Ice cubes as desired
Preparation:
1. Simple syrup: Combine the sugar and water in a saucepan, and heat until it barely begins to boil.
2. Remove from heat and cool. Combine one cup of syrup and one cup of lime juice in a pitcher.
3. Add enough water to make up a half gallon. Serve over ice.
Note: While this limeade is very refreshing it does tend to get bitter if left out for too long, so it should be consumed on the same day it is made.
